Update: January 2025
We are delighted to announce a milestone moment in our distillery build with the installation of our wash and spirit stills! It’s a huge achievement for the brand as we get ready to distil new make spirit at our new site on the Eden Campus.
The beating heart of the distillery, the two hand-crafted copper stills were manufactured by LHS in Speyside and designed in collaboration with our head distiller, Scott Ferguson, to achieve a light, floral new make spirit similar to that which he distilled back in 2014 on our original stills.
The onion shaped wash still (15,000 litres), boil-ball spirit still (11,500 litres) and the shell-and-tube condensers have all been selected to produce a lighter and sweeter spirit with a delicate flavour profile.
We will commence commissioning in March 2025, where we will invite our private cask owners to fill their casks inside the new distillery marking a historical moment in our journey. Our world-class visitors centre is scheduled to open in time for the summer, where we will welcome guests from near and far to our iconic new home.
WHAT'S IN A NAME?
A lot, if you ask us! At the beginning of summer 2024 our branding was installed on the external walls of our distillery. We had all been looking forward to this moment for a long time and it now feels like the building is officially "ours".
It is now easily recognisable as the Eden Mill Distillery to anyone who passes it!
OUR PRIME LOCATION ON THE EDEN ESTUARY
This photo gives you an idea of the views from our distillery windows. The top floor of the visitor centre will be home to a cocktail bar where guests will be able to sit back, relax and take in the beautiful landscape, which is always striking regardless of whether the weather is calm and still or brooding and stormy.
Showcasing the best of gin and whisky
We will offer our guests gin and whisky tours, each of which will take a different route around the distillery.
Both will tell you the story of Eden Mill and our exciting journey so far and both will also finish with a tasting. The cocktail bar will be available to book as a bolt-on to your tour, in case you want your visit to last a little bit longer!
A PLACE TO ENJOY
In addition to our experiences and our cocktail bar, there will also be a retail space where we’ll sell not only our gins and whiskies, but also local produce.
Just a ten-minute drive from St Andrews, our distillery is easy to get to by car or bus, as well as by train as we are within walking distance of Leuchars station. For the more active among us, there is a path leading all the way from the town to the distillery so cycling, running or walking are also an option!

We know we are so lucky to have our home on the beautiful Fife coast and we want our distillery to have the most positive impact possible on its surroundings and on the community.
All our electricity will be 100% renewable, coming from either the solar farm belonging to the University of St Andrews or other renewable energy sources. Additionally, the CO₂ produced during the fermentation process will be captured for future use and we have recently announced an exciting collaboration with a fellow Scottish company, MiAlgae, which will see our effluent waste repurposed to make sustainable Omega-3s.

The Bothy
You may have noticed a small cabin called ‘The Bothy’ perched next to our new distillery.

While we are happy to welcome in visitors, it’s better to schedule some time with our Head of Visitor Experience, Euan, so he can ensure he’s there and so that your visit doesn’t clash with other scheduled appointments.
