Distillery Handover: A significant milestone

On Wednesday 14th June 2023, Eden Mill marked a significant milestone in its history with a joyous celebration of the distillery handover. In a special ceremony, we officially took on full ownership from the landlord and site owner, the University of St Andrews.

Exclusive whisky release gifted to staff to commemorate the occasion

 



To commemorate this remarkable occasion, all Eden Mill staff gathered at the new distillery site, where they were presented with a special release of Eden Mill whisky aptly named the "Distillery Handover." This exclusive bottling served as a symbolic gesture, representing the journey we have undertaken to bring our vision to life.

Opening summer 2024

Nestled within the serene surroundings of the University's Eden Campus in Guardbridge, our distillery has been undergoing meticulous renovation since the beginning of last year. Once we approach the final stages of this transformative project, we will be thrilled to unveil the magnificent new home of Eden Mill Distillery—a place where exceptional single malt whiskies and artisanal gins will come to life.

Stella Morse, Executive Chair at Eden Mill, expressed her enthusiasm, remarking:

"This new home is where we will continue producing our contemporary Scottish gins and restart distillation of our premium single Malt Scotch Whiskies, which will be laid down to mature over the coming years. Set to become one of Scotland's iconic distilleries, it will also be a major St Andrews landmark and a Scottish tourist attraction, sitting at the mouth of the River Eden, with views across to the spires and fairways of St Andrews, a town globally renowned as the 'Home of Golf' and famed for its heritage and historic university."

Commitment to sustainability is top priority

We aim to be carbon neutral by utilizing sustainable building materials. Once operational, we will source all our electricity from renewable sources, including the University of St Andrews' solar farm. Furthermore, we will capture the CO2 produced during the fermentation process for later use by the University.Geoff Morris further emphasized the aim for Eden Campus to become carbon neutral in this decade and the importance of partnering with businesses that share this vision. He stated,

"Our aim for Eden Campus is to become carbon neutral in this decade and we are keen to bring businesses here that share this vision. We will be working with Eden Mill and all our tenants to drive down carbon emissions."

SEA BUCKTHORN BERRIES, LEMON BALM, CITRUS PEEL

Nose:  Strong citrus note - lemon peel, bitter orange, light grapefruit. Delicate spice of coriander and clove at the midpoint. Sweet white fruits - pear, lychee, melon at the very end.

Taste:  Spices of juniper & green pepper followed by bitter-drying berries of cranberry & sea buckthorn. Subtle tastes of pear & lychee for a moment that finish with soft sweet orange peel & vanilla.

Finish:  Clean and smooth with notes of pink peppercorn that moves to a  sweet orangey, lychee note.

Presenting our award winning Golf Gin. A botanically rich spirit with a slightly saline base which is made using kombu seaweed sourced in Fife. Eden Mill Golf Gin also incorporates other ingredients inspired by the flavours that can be found around coastal golf courses in Scotland, such as Lavender and Pine.

SEAWEED. LAVENDER. HEATHER. 

Nose: Hints of Juniper in a forest of lavender and spruce trees. There is a slight tang of the sea that underlies it.

Taste: The juniper dominates as it should but there is a sweetness from the gorse to it that makes sure it isn't overpowering. The heather and lavender add a floral note while the spruce and coriander provide a distinct peppery finish.

Finish: A distinct peppery finish
